Founded in 2001 by Spain's Raventos family, Bodega Septima champions European-inspired winemaking on Mendoza's high-altitude estates, emphasising precision and sustainable vineyard care. The 2023 Cabernet Sauvignon is sourced from select estate blocks where the warm days and cool Andean nights yield fruit with balanced ripeness and natural acidity. Grapes are hand-picked at peak maturity, then destemmed and fermented in temperature-controlled stainless steel tanks, with careful maceration to extract colour and tannin without sacrificing freshness. Following fermentation, the wine matures for eight months in French oak barrels, which lend subtle spice and structure without overwhelming varietal purity. In the glass, this Cabernet shows aromas of cassis, blackcurrant, and a touch of green pepper, supported by hints of cedar and graphite. The palate is medium-bodied, with fine-grained tannins and a persistent, dry finish, making it well-suited for pairing with grilled meats or for short-term cellaring.
