Description
The Les Rendez‑Vous series by Billecart‑Salmon is a set of micro‑cuvées exploring pure expressions of individual grape varieties. No.3 focuses on Pinot Meunier, a variety that contributes suppleness and fruit to traditional Champagne blends but rarely stands alone. Sourced from old‑vine Meunier parcels in the Vallée de la Marne, the fruit is hand harvested, pressed gently and fermented in stainless steel at low temperature to preserve primary aromas. The base wine does not undergo malolactic conversion to retain freshness, and reserve wines are added to build depth. After secondary fermentation, the wine rests on its lees for over three years in the house cellars before disgorgement and an Extra Brut dosage. At 12% alcohol, this Meunier Champagne shows pale gold colour, fine persistent bubbles and aromas of pear, apricot blossom and subtle spice. The palate is medium‑bodied with creamy texture, vibrant acidity and a long, chalky finish. Enjoy as a distinctive aperitif or pair with delicate seafood.
