Description
Founded in 1829 in Ay, Champagne Bollinger remains family owned and is one of the few houses still fermenting base wines in old oak barrels, a practice that gives its style distinctive richness and texture. Special Cuvee is the flagship non vintage release, blending around 60% Pinot Noir, 25% Chardonnay and 15% Meunier. Grapes are sourced largely from grand and premier cru vineyards in Ay, Verzenay and Mareuil sur Ay. About half the final blend comes from reserve wines aged under cork in magnum for between five and fifteen years, providing depth and complexity. After blending, the wine undergoes secondary fermentation in bottle and remains on lees for 30 to 36 months before disgorgement and dosage at 8 to 9g per litre. Bottled at 12% ABV, it shows pale gold colour, fine persistent bead and aromas of apple, pear, citrus, brioche and hazelnut. The palate combines ripe orchard fruit and creamy texture with bright acidity and a chalky, dry finish. A classic expression of Bollinger precision and generosity, it will drink beautifully now or over the next decade.
