Domaine Boeckel is a family-owned estate established in 1853 in the picturesque village of Mittelbergheim, Alsace. Now run by the fifth generation, the domaine farms organic vineyards on the region's limestone slopes. Their Crémant Brut Blanc de Blancs is composed mainly of Chardonnay complemented by Pinot Blanc and Auxerrois, harvested by hand and pressed with care. The base wines ferment in temperature‑controlled stainless steel tanks and spend time on fine lees to build texture before blending. After tirage, bottles are aged sur lattes for two years in the cellar, developing a fine mousse and subtle autolytic complexity. Dosage is kept low to emphasise freshness and minerality. At 12% alcohol, the wine offers pale golden colour, delicate bubbles and aromas of lemon, green apple and white flowers with hints of brioche. The palate is crisp, dry and elegant, balanced by vibrant acidity and a clean, limestone‑driven finish. This Blanc de Blancs Crémant pairs beautifully with shellfish or as an aperitif and will drink well for several years.
