      Founded in 1163 and set among the rugged hills of Priorat, Scala Dei is the region's most historic estate, cultivating old-vine Garnacha and Carignan on terraced licorella soils. The 2019 Cartoixa is the winery's flagship, sourced from some of Priorat's oldest plots, where hand-harvested grapes benefit from dramatic elevation and slate terroir. Each variety is fermented separately with native yeasts in small stainless steel tanks, followed by a gentle maceration to build structure while preserving freshness. The blend then matures for 18 months in French and American oak barrels, gaining aromatic complexity and integration. The finished wine reveals intense aromas of dark cherry, wild herbs, and spice, with a palate that is full-bodied yet vibrant, supported by firm tannins, bright acidity, and a lingering, mineral-driven finish, promising further development with cellaring.
